Don Luis opened Maya Café on Route 9 in 2005 with a single goal: bring the flavors of his grandmother's Yucatán kitchen to the Hudson Valley. Twenty-one years later, the molcajete is still pulled tableside, the cochinita pibil still slow-braises in banana leaves, and the recado rojo is still the answer to every question. Fresh ownership has reinvigorated the restaurant and continues the proud traditions he exemplified. A lively, colorful cantina with live music on the weekends — come hungry, come thirsty, come hug the owner on the way out.
